Ingredients:
🌿 2 Asian pears, peeled, cored, and diced
🌿 1 medium onion, finely chopped
🌿 2 cloves garlic, minced
🌿 2 tablespoons olive oil
🌿 4 cups vegetable or chicken broth
🌿 1 teaspoon fresh thyme leaves, chopped
🌿 Salt and black pepper to taste
🌿 1/4 cup heavy cream (optional)
🌿 Fresh thyme and lemon verbena leaves for garnish
Instructions:
🌿 In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent and fragrant.
🌿 Add the diced Asian pears and chopped fresh thyme. Sauté for a few minutes until the pears start to soften.
🌿 Pour in the vegetable or chicken broth, and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 15-20 minutes or until the pears are tender.
🌿 Use an immersion blender or a regular blender to puree the soup until smooth.
🌿 Return the pureed soup to the pot and stir in 1-2 tablespoons of the Asian Pear, Thyme, and Lemon Verbena Shrub. Adjust the amount to your taste, adding more if desired.
🌿 Season the soup with salt and black pepper to taste.
🌿 If you'd like a creamier soup, stir in the heavy cream.
🌿 Serve the soup hot, garnished with fresh thyme and lemon verbena leaves.
