This tuna salad was the result of an attempt to make something interesting and delicious out of what I could forage from a college cafeteria. People looked somewhat askance at my creation, but I’ve been enjoying it now for many years and it is DELICIOUS. So who has the last laugh now? :)
Ingredients
❤️1 can olive packed tuna fish (if all you have is packed in water, just add a teaspoon or 2 of olive oil when you’re mixing everything up)
❤️Small handful dried cherries (maybe 10-ish)
❤️1 stalk celery, chopped
❤️1 scallion, chopped
❤️2 teaspoons capers
❤️1 teaspoon Bragg’s amino acid, tamari, or soy sauce
❤️1 tablespoon any flavor Urban Pharm shrub
Directions
Put all ingredients in a bowl and mix until well combined. Scoop up with endive or crackers, put it in a pita, or between two pieces of the most delicious bread you can find. Easy peasy!
