๐ 1 pint cherry tomatoes
๐ ย ยฝ cup shallots, thinly sliced
๐ ย 4 cloves garlic, finely chopped
๐ ย 2 Tbs Urban Pharm Apple, Rosemary, and Flowers Shrub
๐ ย 2 Tbs Olive oil (+ some to coat fish filets)ย
๐ ย 1 lb firm white fish (cod, halibut)
๐ ย Salt + Pepper
๐ ย Zest of one lemon
๐ ย Handful of fresh mint + basil, chopped or ripped
Heat oven to 400. Mix up tomatoes, shallots, garlic, shrub, olive oil, a sprinkle of flaky sea salt, a few grinds of black pepper in a sided baking dish and let mingle while oven heats up. Cook until melty, about 15 mins. Coat fish filets in olive oil, salt, and pepper and lay across top of tomatoes. Cook until flaky and opaque, about 10 mins. Spoon tomatoey goodness over top of fish, add a bit of lemon zest, mint, and basil and dig in!

We brought halibut home from Alaska this summer. I am showing this recipe to Andy and asking him to make it! Or maybe if Iโm feeling really brave, Iโll prepare it myself because you do make it sound easy.
