This light cocktail is made from Urban Pharm’s Watermelon, Mint, and Himalayan Salt Shrub and simple syrup infused with Curio’s Botanist Mulling Spices. This syrup has a floral, honeyed, and citrusy flavor, and is a terrific addition to your drinks repertoire—use in cocktails, iced tea, or lemonade. It is also delicious drizzled on fruit or desserts.
For the Botanist simple syrup (enough for 10 cocktails):
💕 1 cup granulated sugar
💕 2 tablespoons Botanist Mulling Spices
For the cocktail:
💕 1 ounce dry vermouth
💕 1 ounce shrub
💕 1 ounce Botanist simple syrup
💕 4-5 ounces sparkling water
💕 Curio Magic Salt for the glass rim
💕 Fresh mint sprig, for garnish
Make the syrup
💕 Put the sugar and spices in a heavy saucepan set over medium-high heat. Add ½ cup of water and bring to a boil, stirring gently to dissolve the sugar. Boil for 1 minute then remove the pan from the heat and set aside for 20 minutes. Strain the syrup through a fine mesh sieve into a container. Discard the spices. Store the syrup in the fridge.
Make the cocktail
💕 Put about ¼ cup of ice into a tall glass and add the vermouth, shrub, syrup, and seltzer. Stir for 20 seconds. Put Magic Salt on the glass rim, garnish with mint, and serve.
